1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup brown sugar
2 large eggs
1 1/2 cups milk (dairy or non-dairy)
1/4 cup melted butter or coconut oil
1 teaspoon vanilla extract
2 medium apples, peeled and diced
1/4 cup chopped pecans (optional, for topping)
2 tablespoons brown sugar (for topping)
2 tablespoons all-purpose flour (for topping)
2 tablespoons cold butter (for topping)
Instructions
Preheat your oven to 375°F (190°C). Grease an 8×8 inch baking dish.
In a large bowl, mix the rolled oats, baking powder, cinnamon, salt, and 1/4 cup brown sugar.
In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
Pour the mixture into the prepared baking dish.
Prepare the streusel topping: In a small bowl, combine the 2 tablespoons brown sugar, flour, and pecans (if using). Cut in the 2 tablespoons cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
Sprinkle the streusel evenly over the top of the oatmeal mixture.
Bake for 35 to 40 minutes, or until the top is golden brown and the center is set.
Let it cool for 5 minutes before slicing and serving.
Notes
You can substitute blueberries or other firm fruits for the apples.
For a lower sugar option, reduce the brown sugar in the base mixture to 2 tablespoons.
This keeps well in the refrigerator for up to 4 days; reheat individual portions in the microwave.
