Baked Buffalo Chicken Egg Rolls

Enjoy these delicious baked buffalo chicken egg rolls, a perfect party appetizer that’s crispy and flavorful without the deep frying.

  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup buffalo wing sauce, plus more for serving
  • 1/4 cup blue cheese dressing, plus more for serving
  • 1/4 cup crumbled blue cheese
  • 1/4 cup chopped celery
  • 8 egg roll wrappers
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook chicken breasts until thoroughly cooked. You can boil, bake, or pan-fry them.
  3. Shred the cooked chicken using two forks or a stand mixer.
  4. In a bowl, combine the shredded chicken, buffalo wing sauce, blue cheese dressing, crumbled blue cheese, and chopped celery. Mix well.
  5. Lay an egg roll wrapper flat on a clean surface. Spoon about 2-3 tablespoons of the chicken mixture onto the center of the wrapper.
  6. Fold the bottom edge of the wrapper over the filling, then fold in the sides. Roll it up tightly from the bottom to the top, sealing the edge with a little water if needed.
  7. Repeat with the remaining wrappers and filling.
  8. Brush the outside of each egg roll with olive oil.
  9. Place the egg rolls on a baking sheet lined with parchment paper.
  10. Bake for 15-20 minutes, or until golden brown and crispy, flipping halfway through.
  11. Serve warm with extra buffalo wing sauce and blue cheese dressing.

Notes

  • For extra crispiness, you can bake them at a higher temperature for a shorter time, keeping a close eye to prevent burning.
  • Feel free to adjust the amount of buffalo wing sauce to your spice preference.
  • If you don’t have blue cheese dressing, ranch dressing is a good substitute.
