Instructions

  1. Prepare the crust layer: Crush the chocolate sandwich cookies until fine crumbs form. Press half of the cookie crumbs into the bottom of a large glass trifle bowl or individual serving glasses. Set aside the remaining crumbs for topping.
  2. Make the cheesecake layer: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Fold in 1/4 cup of the Baileys Irish Cream liqueur. Spread this cheesecake mixture evenly over the cookie crust.
  3. Make the pudding layer: In a medium bowl, whisk together the instant chocolate pudding mix, cold milk, and the remaining 1/4 cup of Baileys Irish Cream liqueur until the mixture thickens, about 2 minutes. Gently fold the thawed whipped topping into the pudding mixture until just combined.
  4. Layer the trifle: Carefully spoon or pipe the chocolate pudding mixture over the cheesecake layer. Smooth the top gently.
  5. Chill: Cover the trifle bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set firmly. This step is crucial for a clean slice.
  6. Serve: Before serving your luxurious creamy dessert, sprinkle the reserved cookie crumbs and chocolate chips or shaved chocolate over the top layer. Serve cold.
