Bacon-Wrapped Dates with Almonds

  • 12 pitted Medjool dates
  • 12 whole almonds
  • 6 slices of bacon, cut in half
  • 1 tablespoon brown sugar (optional, for extra sweetness)
  • 1 teaspoon chopped fresh rosemary (optional, for an herbal note)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Stuff one almond into the cavity of each pitted date.
  3. If using, sprinkle a tiny pinch of brown sugar and a bit of chopped rosemary into the date with the almond.
  4. Wrap each stuffed date with a half-slice of bacon, securing it with a toothpick if needed.
  5. Place the wrapped dates on the prepared baking sheet.
  6. Bake for 15-20 minutes, or until the bacon is crispy and golden brown.
  7. Remove toothpicks before serving. Let them cool slightly as they will be hot.

Notes

  • Ensure your dates are large and soft enough to easily stuff.
  • If you don’t have toothpicks, you can secure the bacon by tucking the end under itself.
  • These are best served warm.
