  • 1 lb yellow squash, thinly sliced
  • 1/2 lb bacon, chopped
  • 1/2 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 egg, beaten
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook bacon in a skillet until crisp. Remove bacon and set aside, leaving bacon grease in the skillet.
  3. Add chopped onion and bell pepper to the skillet and cook until softened.
  4. In a large bowl, combine sliced squash, cooked onion and bell pepper, crumbled bacon, shredded cheddar cheese, sour cream, mayonnaise, and beaten egg. Season with salt and pepper.
  5. Pour the mixture into a greased baking dish.
  6. Top with breadcrumbs.
  7. Bake for 25-30 minutes, or until bubbly and golden brown.
