1 lb yellow squash, thinly sliced
1/2 lb bacon, chopped
1/2 cup chopped onion
1/4 cup chopped bell pepper
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup mayonnaise
1 egg, beaten
1/4 cup breadcrumbs
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
Cook bacon in a skillet until crisp. Remove bacon and set aside, leaving bacon grease in the skillet.
Add chopped onion and bell pepper to the skillet and cook until softened.
In a large bowl, combine sliced squash, cooked onion and bell pepper, crumbled bacon, shredded cheddar cheese, sour cream, mayonnaise, and beaten egg. Season with salt and pepper.
Pour the mixture into a greased baking dish.
Top with breadcrumbs.
Bake for 25-30 minutes, or until bubbly and golden brown.
Notes
You can add other vegetables like mushrooms or celery.
For a spicier casserole, add a pinch of red pepper flakes.
