Bacon Jalapeno Cheddar Cheese Straws

  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 4 ounces sharp cheddar cheese, grated
  • 2 tablespoons finely chopped cooked bacon
  • 1 small jalapeno, finely minced (seeds removed for less heat)
  • 3-4 tablespoons ice water

Instructions

  1. In a large bowl, whisk together the flour, salt, and cayenne pepper.
  2. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  3. Stir in the grated cheddar cheese, chopped bacon, and minced jalapeno until evenly distributed.
  4. Add the ice water one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
  5. Form the dough into a flat disk, wrap it in plastic wrap, and chill for at least 30 minutes.
  6. Preheat your oven to 400 degrees F (200 degrees C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll the chilled dough out to about 1/8-inch thickness.
  8. Use a sharp knife or pizza cutter to cut the dough into long, thin strips (about 1/2 inch wide).
  9. Gently twist each strip a few times to form a straw shape. Place the twists on the prepared baking sheets.
  10. Bake for 12 to 15 minutes, or until golden brown and crisp.
  11. Cool completely on the baking sheets before serving.
