Apricot Vanilla Cardamom Jam

  • 4 cups fresh apricots, pitted and chopped
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 vanilla bean, split and scraped
  • 1/2 teaspoon ground cardamom

Instructions

  1. Combine chopped apricots, sugar, and lemon juice in a large pot.
  2. Add the vanilla bean pod and seeds, and ground cardamom to the pot.
  3. Bring the mixture to a boil over medium-high heat, stirring constantly.
  4. Reduce heat to medium-low and simmer, stirring occasionally, for 20-30 minutes, or until the jam thickens and reaches your desired consistency.
  5. Remove the vanilla bean pod.
  6. Ladle hot jam into sterilized jars, leaving 1/4 inch headspace.
  7. Process jars in a boiling water bath for 10 minutes to seal.
  8. Cool jars completely on a wire rack.

Notes

  • Use ripe apricots for the best flavor.
  • Adjust sugar to your taste.
  • Test for jam set by placing a small amount on a cold plate and drawing a line through it. If the line stays, it is ready.
  • Store unopened jars in a cool, dark place for up to 1 year.
  • Refrigerate opened jars for up to 3 weeks.
