Ingredients

Scale
  • 4 bone-in pork chops (about 1 inch thick)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 cup apple cider
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced

Instructions

  1. Season the pork chops generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the pork chops for 3 to 4 minutes per side until golden brown. Remove chops from the skillet and set aside.
  4. Reduce the heat to medium. Pour the apple cider into the skillet and scrape up any browned bits from the bottom.
  5. Stir in the apple cider vinegar, brown sugar, Dijon mustard, and minced garlic.
  6. Bring the mixture to a simmer and cook for about 5 to 7 minutes, stirring occasionally, until the sauce has slightly thickened.
  7. Return the pork chops to the skillet. Spoon the glaze over the chops.
  8. Cover the skillet and continue to cook for another 5 to 8 minutes, or until the pork reaches an internal temperature of 145°F.
  9. Remove the pork chops from the skillet and let them rest for 5 minutes before serving with the extra pan sauce drizzled over top.

Notes

  • You can substitute maple syrup for brown sugar if you prefer a different sweetness profile.
  • Fresh thyme sprigs added during the simmering stage add a nice herbal note to the glaze.
  • For thicker chops, you may need a few extra minutes of cooking time after glazing.
