Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup apple cider
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • For the Glaze: 1 cup powdered sugar, 2-3 tablespoons apple cider, pinch of cinnamon

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  2. In a separate bowl, whisk together apple cider, melted butter, egg, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat to 350°F (175°C).
  5. Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, until golden brown.
  6. Remove doughnuts with a slotted spoon and place on a wire rack set over paper towels to drain.
  7. While the doughnuts are still warm, whisk together powdered sugar, apple cider, and cinnamon for the glaze. Dip the doughnuts into the glaze or drizzle over the top.

Notes

  • Ensure the oil is at the correct temperature for even cooking.
  • Do not overmix the batter to keep the doughnuts tender.
  • Adjust the amount of apple cider in the glaze to reach your desired consistency.
