1 and 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon salt
1/2 cup apple cider
1 large egg
1 tablespoon unsalted butter, melted
1 teaspoon vanilla extract
Vegetable oil, for frying
1/2 cup powdered sugar
1 teaspoon cinnamon (for coating)
Instructions
In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, allspice, and salt.
In a separate medium bowl, whisk together the apple cider, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat to 350°F (175°C).
Using a small cookie scoop or two spoons, carefully drop spoonfuls of dough into the hot oil. Do not overcrowd the pot.
Fry for 2-3 minutes per side, until golden brown and cooked through.
Remove the doughnut holes with a slotted spoon and place them on a wire rack set over a baking sheet to drain any excess oil.
In a small bowl, whisk together the powdered sugar and cinnamon for the coating.
While the doughnut holes are still warm, toss them in the powdered sugar-cinnamon mixture until evenly coated.
