Mini Breakfast Pizza Muffins

Make fun Mini Breakfast Pizza Muffins perfect for a special weekend breakfast for your kids. These easy muffins pack cheese and veggies into a portable, kid-approved bite.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup shredded cheddar cheese, plus more for topping
  • 1/4 cup chopped cooked ham or turkey sausage (optional)
  • 1/4 cup finely chopped bell peppers (any color)
  • 2 tablespoons finely chopped onion
  • 1/4 cup pizza sauce or tomato paste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin well.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, whisk the egg, milk, and oil until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix.
  5. Fold in the 1/2 cup of cheese, chopped ham or sausage (if using), bell peppers, and onion.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with a small spoonful of pizza sauce.
  8. Sprinkle a little extra shredded cheese on top of the sauce.
  9. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool slightly. Serve warm.

Notes

  • You can swap the vegetables based on what your kids enjoy. Try mushrooms or spinach.
  • These freeze well. Let them cool completely, then store in an airtight container or freezer bag. Reheat in the microwave or toaster oven.
  • For a little extra flavor, add a pinch of dried oregano to the batter.
