Air Fryer Vegetable Frittata Bites

Make these delightful Air Fryer Vegetable Frittata Bites for an easy, flavorful breakfast or snack. They are perfect for meal prepping or enjoying a little bit of Sunday flavor any day of the week.

  • 6 large eggs
  • 1/4 cup milk (any kind)
  • 1/2 cup chopped mixed vegetables (spinach, bell peppers, onion)
  • 1/4 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon olive oil
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Lightly spray your air fryer basket or silicone muffin tray with olive oil.
  2. In a bowl, whisk the eggs and milk together until well combined.
  3. Stir in the chopped vegetables, shredded cheese, salt, and pepper into the egg mixture.
  4. Divide the mixture evenly among 6 standard muffin cups placed inside the air fryer basket, filling each about three-quarters full.
  5. Air fry at 350°F (175°C) for 10 to 12 minutes.
  6. Check for doneness; the centers should be set and slightly puffed.
  7. Carefully remove the frittata bites from the air fryer and let them cool slightly before serving.
