3 very ripe bananas, mashed
1/3 cup melted butter
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1/2 cup chopped pecans, plus 2 tablespoons for topping
Instructions
Grease a small loaf pan that fits inside your air fryer basket (usually a 6×3 inch or similar size).
In a bowl, mix the mashed bananas, melted butter, sugar, egg, and vanilla extract until combined.
In a separate bowl, whisk together the baking soda and salt with the flour.
Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
Fold in the 1/2 cup of chopped pecans.
Pour the batter into the prepared loaf pan. Sprinkle the remaining 2 tablespoons of pecans on top.
Place the loaf pan carefully into the air fryer basket.
Air fry at 320°F (160°C) for 30 to 40 minutes.
Check for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs attached. If the top browns too quickly, loosely cover it with foil for the remainder of the cooking time.
Remove the pan from the air fryer and let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
