  • 1 tablespoon grated fresh ginger
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon gochujang (Korean chili paste), or to taste
  • 8 ounces dried noodles (such as ramen, udon, or spaghetti)
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Cook the noodles according to package directions. Drain and set aside.
  2. While the noodles cook, brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  3. Add the minced garlic and grated ginger to the skillet with the beef and cook for 1 minute until fragrant.
  4. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang.
  5. Pour the sauce over the beef mixture in the skillet. Stir to combine and cook for 2-3 minutes until the sauce has thickened slightly.
  6. Add the cooked noodles to the skillet with the beef and sauce. Toss everything together until the noodles are well coated.
  7. Serve immediately, garnished with sliced green onions and toasted sesame seeds.

Notes

  • Adjust the amount of gochujang to control the spice level.
  • Feel free to add other vegetables like shredded carrots or spinach for extra nutrition and color.
  • For a richer flavor, you can add a teaspoon of mirin to the sauce.
